Pumpkin Cranberry Streusel Bars

For the filling:

2 packets of Splenda, Truvia, or Stevia

8 oz canned pumpkin

1 tsp. cinnamon

1/2 tsp. pumpkin pie spice (if you don't have this, you could mix cinnamon and nutmeg together)

2 tsp. baking soda

1/4 tsp. salt

3 egg whites

1/2 tsp. vanilla

1 cup. oat flour (if you don't have this, just grind up 1 cup of oats)

1 1/2 scoops vanilla or pumpkin protein

1/4 cup. almond milk

1/4 cup. chopped or whole walnuts (i used pecans, just my preference)

1/3 cup cranberry jelly (or raspberry)

For the Streusel:

3 tsp. Sweetener

3 Tbsp. coconut oil (melted)

1/2 cup. oats

1 tsp. pumpkin pie spice

1 tsp. cinnamon

Directions: (makes 12 bars)

1. Preheat the oven to 350*

2. Combine all ingredients in a bowl except for the pumpkin, walnuts, and oat flour

3. Mix those together and then add in the pumpkin, walnuts, and oat flour; one at a time, mix again

4. Spread 1/2 the batter into a sprayed 8x8 or 9x13 dish

5. Spread jelly over the batter and pour the remaining batter on top

6. In a separate microwave safe bowl, melt the coconut oil and then add the streusel ingredients to it. This mixture should be crumbly, which is okay!

7. Break it up into pieces and put over the top of the batter

8. Bake for 20 mins
